French toast recipe from Riv'k restaurant

It's hard to resist the famous French toast recipe from Riv'k restaurant!

The Riv'k restaurant unveils today the recipe of its famous French toast that makes gourmets melt. In the kitchen, all of it! While waiting for the reopening of the restaurant!

Recipe of the French toast of the restaurant Riv'k

Ingredients:
350g of flour
150ml of warm milk
120g of butter at room temperature
2 egg yolks + 1 for gilding
80g of sugar
12g fresh yeast
1 teaspoon of salt
Butter, half salt and sugar for cooking at the end

Preparation:

Dissolve the yeast in a little warm milk.

In the bowl of a food processor, pour the flour, sugar, butter, two egg yolks, milk and the milk + yeast mixture. Start kneading for one minute and then add the salt.

Form a ball, cover with a damp cloth and leave to rise until the dough doubles in volume.

Deaerate the dough, cut it into 8 equal parts, form small balls and place in a cake tin. Leave to rise for 30 minutes in the oven when cold.

Remove the brioche from the oven and preheat it to 180°C.

Brown the top of the brioche with the egg yolk and bake for 30 to 35 minutes. Allow to cool and then remove from the mould.

Cut a piece of thick brioche. Soak it in a cream/egg mixture.

In a frying pan, melt a generous piece of butter with a little sugar. Put the soaked brioche in the pan and caramelize it until it becomes well caramelized. Let it rest for 2/3 minutes in the hot pan and serve with a spoonful of whipped cream or a scoop of vanilla ice cream in summer.
