You've no doubt seen his chouquettes in recent days... Philippe Conticini is causing a sensation with his chouquettes, which he offers in his patisserie Gâteaux d'Emotion on rue Notre Dame de Nazareth. His collaborator, Laetitia Di Leta, is at the helm. With a smile, she juggles the many gourmands who come into the store and the 50 orders she receives. On some Saturdays, she has up to 80 orders to fill, which just goes to show how much the cream puffs appeal. "After 2 p.m., there's no point in coming!" she warns us, "it's better to order online."
The chouquettes are filled to the minute with pastry creams and seasonal inserts; vanilla, chantilly, coffee, chocolate, lemon and citrus for the creams, citrus, lemon, praline, caramel, speculoos for the inserts that enhance the choux. Laetitia recommends citrus-praliné, coffee-speculoos and the delicious vanilla-chantilly.
Philippe Conticini, for his part, advises making "classic" chouquettes, without the addition of chantilly, despite the Instagram trend. He accepts the seasonal flavors imagined by Laetitia, as long as the quality of the chouquettes is up to scratch. He's known for his cream puffs and Paris-Brest, and has just released a babamisu, a coffee baba so melt-in-your-mouth it's light as a cloud, and a CBD dessert. The success of his choux bar is such that the chef is thinking of opening a millefeuille minute bar at his other address in the 15th arrondissement.
They are sold for 4.5 euros, whatever the insert chosen, and packs of 3 chouquettes are available for 11 euros. At this price, you'll leave with delicious chouquettes, to be enjoyed fresh, on the go or at home if you can wait!
