Alain Ducasse never ceases to have projects in mind... After a cookie factory, which he mentioned to us last July, the chef is back with a new ephemeral table, from November 2021, in the restaurant Ombres, the address perched on the roof of the Quai Branly museum.
The name is ADMO, a contraction ofAdrià, Ducasse, Meder and Ombres, the surnames of his two collaborators on this project, Albert Adrià and Romain Meder, his own surname and the name of the museum restaurant where this ephemeral table will be set up. For 100 days, from November 10, the chefs will launch this experimental project, imagined as a"haute cuisine proposition" rooted in Spanish and French culture, yet emancipated through the quest for innovation so dear to the Monegasque chef.
A new way of practicing gastronomy, and a cuisine that should, in keeping with the concept of Naturalité initiated by Alain Ducasse, marry"cereals, vegetables and sustainably caught fish", as our colleagues at Le Point explain. Naturality is at the heart of this short-lived restaurant, whose fundamentals remain unchanged:"adapting to new sustainable constraints, making the conscious choice to reduce fat and sugar intake, and preserving the direct link with the season".
As for the menu, in addition to the three renowned chefs, pastry chef Jessica Préalpato will continue her work on "Desseralité", an approach she initiated at the instigation ofAlain Ducasse. A fine address and a real gastronomic promise that we can't wait to discover!
