This new little shop, called Papo, highlights a Portuguese speciality that is still little-known in Paris: papo, a small bread with fillings that comes in several delicious versions.

With winter approaching, everyone is looking to keep their spirits up in one way or another. If you're the kind of person who likes to put sunshine on your plate, then you're going to be delighted to learn of the opening of a new restaurant in the 11th arrondissement, showcasing Portuguese specialties that are still little-known in Paris.

Called Papo, this brightly-colored street food stall takes its name from a typically Portuguese bread roll that can be eaten at any time of day.

Morgane Thomas and Anissa Martinho run the place, revisiting this specialty in their own way, using secret recipes handed down by Anissa's grandmother and made withcarefully sourced ingredients . At Papo, the early vegetables and yellow chicken come from the Vendée, the farmhouse pork from the Gers, while the cod, spices, cheese and oil come straight from Portugal. So much for impeccable sourcing!

In terms of recipe, papo is an airy, golden bread topped with sucrine, vegetable pickles, piri-piri pepper ketchup, savora mayonnaise and Portuguese cheese. And here, papo comes in a number of tasty versions, such as Crispy Frango with super-crispy yellow Vendée chicken thanks to a breading of corn petals, paprika and secret marinade; or a vegetarian version for those concerned.

For our part, we completely fell for (and loved!) the Mashed Bacalhau, offered in the style of Portuguese fish & chips with crispy-melt cod fritters prepared with potato, parsley and onion; but also for the Pulled Porco with marinated farm-fresh pork from the Gers, cooked for 12 hours. A delight accompanied by fine, crispy fries. We also opted - purely out of greed, as the sandwiches are generously topped! - for the tosta mista (5€), a Portuguese-style croque with a lot of string cheese and perfectly toasted bread, naughty!

And for dessert, of course, we're partial to the quintessential Portuguese pastry, the pastel de nata, creamy and served warm for added pleasure, to be accompanied by a lemon Frize lemonade, a Super Bock beer or a Sumol soda.
