Welcomed like old friends by Romain, the owner of the place whose joy of living is contagious, you immediately feel at home. On his passionate advice, we'll let ourselves be tempted by a classic Corsican bistronomy starter (and a must for gourmets): the perfect egg. But be careful, here, we revisit it with a Corsican accent! We find it surrounded by an airy mousse of figatellu with a pan of mushrooms and crispy panzetta. An introduction that sets the tone for the tasting: here, we prepare to savor a cuisine that is both generous and modern! Another favorite to start your meal is the eggplant caviar au gratin with Corsican sheep's cheese, which goes perfectly with the sweet notes of the sun-drenched fruit.
While Romain serves the meal, singing and whistling, it is time for us to move on to the main course. There, it is time for generosity and comfort. We are conquered by the risotto with bulagna softened by a cream of butternut which brings a beautiful unctuousness, with Corsican ewe's milk tomme and sage to raise the whole, decorated with panzetta crispy for a crunchy note. The result: the recipe has a nice balance of flavors and textures. Although the plate is copious, the dish is not as heavy as it seems, we can then let ourselves be carried by our greed!
If you love stewed dishes and beef bourguignon is your favorite, don't miss the Stufatu di Vitellu, a veal stew simmered for 3 hours with oltremonti olives and potatoes. When the time comes to attack this beautifully prepared plate, the meat yields without the slightest resistance under our fork stroke and literally melts in the mouth. This tasting brings us back to the sweet memories of family meals in a friendly atmosphere through this more traditional and terribly irresistible recipe.

If you are aficionados of this unavoidable Sunday treat, there is no question of missing the U Mulinu version.
