Close to Giverny, near Vétheuil and La Roche Guyon, the Panoramique restaurant, nestled in the romantic Domaine de la Corniche in the Yvelines, is the ideal spot to go green without having to travel too far. With its huge picture windows offering one of the finest views of the Seine in the Ile-de-France region, it's hard not to fall in love.
It's in this setting, worthy of an impressionist painting, that we sit down to discover the cuisine of Gaïtan Perulli, who has been at the helm of the restaurant since 2018. For the record, Gaïtan Perulli is no stranger to Michelin-starred establishments, having worked with Davy Tissot, Yannick Alléno and Éric Frechon, notably at Le Bristol and Le Meurice.
In 2018, Julien Razemont, then freshly starred at the Panoramique restaurant, decided to devote himself to his personal life and suggested to his former colleague, Gaëtan, that he replace him. Gaëtan jumped at the chance and rolled up his sleeves to succeed his friend, well aware of the challenge of maintaining the Michelin star and its level of excellence. He took advantage of the post-COVID period to revolutionize the menu, opting since then for a single menu ranging from 3 to 7 courses, with a focus on local produce.
The old, complex menu that had accompanied the restaurant for ages has been replaced by an ephemeral menu that changes every two weeks. The menu features seasonal and mostly local produce.
This strategy is aimed at controlling costs, reducing waste and losses, avoiding dependence on the availability and willingness of suppliers, favoring short circuits and maximum use of local products. Even the bread and Viennese pastries come from their own bakery, so we're talking fresh and artisanal.
During our summer visit, we discovered an ode to the tomato, with a fine carpaccio of sea bream, as well as eggplant from the Lommoye biofarm in caviar, just-stiffened carabinero and carapace soup for starters.
On the main course, the zucchini in mousseline with its flower stuffed and then roasted, accompanied by a wild sea bass cooked a la plancha and topped with a curry butter was refined and melting. The plum, with its beet mousseline on which a sautéed fillet of duck came to rest, was rich in flavor and freshness.
After a lovely Soliès fig with fresh goat's cheese, the meal continued with blackberry, a dessert composed of blackberry compote and vinaigrette, strawberry and sumac pepper sorbet and vanilla ganache montée. My sidekick falls for the Matcha Tea with streusel and infused beaten milk, yuzu gel, crystallized shiso leaf and milk ice cream. These are wonderful discoveries.
In short, as you can imagine, these menus will be different when you arrive. Although the menu is announced, it may even change on the day itself, depending on the market and what's available. Whatever happens, freshness is guaranteed. In short, if you're looking for a good restaurant in the Yvelines for a special occasion, a charming or even romantic setting for a weekend away, or simply a refined restaurant with a breathtaking view, this is an address to keep on your radar.
Open Wednesday to Saturday, lunch and dinner. On Sundays and public holidays, it's brunch time at Le Belvédère. From 11:30 a.m. to 2:30 p.m., enjoy an all-you-can-eat buffet at €55 for adults and €25 for children. Don't forget to book.
