Let's go to 17 rue des Moines Paris 17th, a stone's throw from Jeffrey Cagnes' new pastry shop, to discover the Boulangerie Baptiste (in homage to his son), the new spot of Joël Defives, Meilleur Ouvrier de France who excelled in Thierry Marx bakeries. The goal of this new place: good food and respect for the French baking tradition.
On the program: pastries, pastries made by Fred Vignolet, snacks and hot dishes and of course good traditional breads like the Baptiste bread, dark and strong in aroma, made from Label Rouge roasted malted wheat flours. On the sweet side, you can discoverthe Batignolles, a chocolate cake with an intense taste that can be enjoyed in any season.
"Returning to natural and generous bread is Boulangerie Baptiste's ambition , "says Joël Defives. Demanding on the choice of raw materials, Joël Defives has opted for a selection of old wheat for its gustatory, nutritious and above all more digestible qualities . The slow sourdough fermentation, a signature process of Boulangerie Baptise - faithful to the bakery know-how of yesteryear! - offers a bread rich in taste and with a generous crust. And all the while being more digestible!
"Boulangerie Baptiste was born out of a desire to share and transmit. This place is therefore a place conducive to exchanges where passion is the key word," says Joël Defives, the founder. As you can imagine, workshops are scheduled for cooking and baking enthusiasts.
The Boulangerie Baptiste also has an eco-responsible approach. Thus, waste is tracked down, packaging is recyclable or reusable and overproduction is banned. The spot relies on a choice of demanding products that favors organic, sustainable agriculture of the day and Label Rouge.
