With its own maturing cellar, fromagerie Lyre is the Batignolles district's creative and well-advised cheese shop.

La Fromagerie Lyre has opened its doors in the 17th arrondissement, and it's a creative, fussy and well-mannered new cheese shop that now delights this corner of Batignolles. At the helm is young artisan cheesemaker Lucas Schmitt in partnership with Cyril Echallier, owner of wine cellars La Prohibition, La Cave des Buttes and La Cave Ménilmontant.

Lucas Schmitt trained in thecraft of cheese-making at L'Eau à la Bouche in London, before returning to France to specialize in theart of ripening at Chez Virginie in the 18th arrondissement, then at Laurent Dubois, the MOF fromager in the 15th arrondissement.

So it's only natural that the Lyre cheese dairy should have its own maturing cellar, where some thirty cheeses are displayed for all to see. It's also the reason whyLucas Schmitt brought back a few references of cheeses from across the Channel in his London suitcases. But if there aren't many of these, just as there aren't many cheeses from around the world, it's because the young cheesemaker has decided to focus on France's heritage.

To do so, this Percheron native took the time to travel the roads of France to discover farms and producers, in order to put together a selection highlighting short-distance circuits, from the best-known appellations to niche creations. In all, Lyre unveils a selection of more or less 120 cheeses, depending on the season, as well as unique creations to be discovered very soon.

Alongside dairy products (butter, raw cream, etc.), Fromagerie Lyre also has a delicatessen corner where you can pick up artisanal Italian charcuterie, spices, sauces, jars of capers, potato chips, confits, vinegars - in short, everything you need to stock up your home kitchen.

The cheese shop also focuses on wines byodynamie, with no fewer than 165 references of wines, beers and spirits, which can also be discovered in workshops organized from time to time, during which the young cheesemonger takes great pleasure in tasting cheese and spirit pairings.
