It's a well-known fact that Paris's 17th arrondissement abounds in fine addresses that gourmets pass on by word of mouth. L'Escient takes pride of place among these spots that make the taste buds tingle. This family-run restaurant delights with bistronomic cuisine inspired by Asian flavors.
Every third Thursday of the month, more and more gourmets flock here to enjoy the barbecue evening. And when we say it draws a crowd, that means you should book your table as soon as possible.
But what are barbecue evenings, and why are they so successful? At these dinners, you enjoy a special menu with your choice of meat or fish, marinated and just seared in a Green Egg (or Kamado barbecue). This ceramic barbecue is very popular with chefs, and also has the advantage of not leaving a strong odor.
This special menu offers excellent value for money: €39 per person. This includes an elaborate amuse-bouche, starter, main course and dessert. The menu varies from one evening to the next, and is always a great culinary experience. In our test, we started with a yoghurt kefir featuring chickpeas, vegetables, mint and coriander, with a crunchy peanut praline. A very fresh appetizer that whets our appetite.
For starters, the firm, juicy prawns were served on a tarama to die for, spiced up with smoked bonito rice vinegar. Then we got to the heart of the matter: the barbecue! It's worth noting that on each of these evenings, L'Escient smokes its dishes with a different type of wood. This evening it was cherry wood. We had a choice of salmon or beef, tiger style.
The salmon lacquered with teriyaki sauce is a delight for lovers of sweet and sour. Semi-cooked, the flesh is tender and the smokiness is palpable. It's accompanied by Green Egg -smoked vegetables and a touch of guacamole. And as we all know, salmon + avocado = the perfect combo.
As for the Crying Tiger beef, it's enough to make the king of felines roar with pleasure. Of course, you have a choice of cooking methods, but it's recommended that this meat be served blue. And that's good advice! Served with black rice, the beef literally melts in your mouth.
Why cry tiger?
Because legend has it that this meat is so good it would make a tiger cry.
Finally, we move on to dessert. We have two choices, including one of L'Escient 's signature creations:écume chocolat. Very light, this foam is accompanied by a crème passion caramel, lychee and vanilla ice cream: a very gourmet combination. We bet you won't leave a drop!
The second proposal is a lemongrass-infused mango compote with yahurt ice cream and gingerbread tuile: a subtle combination that's sure to make fruit-eaters go wild!
In the end, the menu is very well balanced: the plates are designed and measured so that you can eat from appetizer to dessert without having to struggle to finish your plate. You'll come away perfectly satisfied, having fully savored all these fine culinary creations.
