Winter is fast approaching, and so is the gloom that goes with it. To keep the gloom at bay, there's nothing like putting some sunshine on your plate, and that's what the new Mediterranean restaurant Kalank, recently opened on the Place de la Nation, is all about.
Originally from Marseille, but a Parisian by adoption for the past 25 years, Patrick Sacchetti has imagined Kalank as both a table and a delicatessen with Mediterranean flavors, where you can discover his most beautiful culinary memories, picked up here and there while crisscrossing the roads of the South of France, meeting producers, farmers and winegrowers from Provence, Languedoc and Corsica.
Gourmands and gourmets discover little-known products, even those not found elsewhere in the capital: honey from Marseille, red mullet rillettes, vintage sardines, 100% Rolle Brin de Mimosa white wine, lemon jam from Menton. La crême de la crême, to be savored in a southern ambiance of rattan, olive trees and dried flowers.
In the kitchen, chef Kei Miura, all the way from Japan, leads the way. Inspired by traditional recipes from the South of France, he offers a seasonal cuisine based on carefully sourced products: Taureau au Pistou carpaccio, Nyons black olive tapenade, tomatoes stuffed with eggplant riste or Chichi-Frégi with aniseed chocolate, accompanied by pastis, wine or a local beer.
