"Boubalé", meaning "my little doll, my little darling", is the beloved Yiddish expression of Ashkenazi grandmothers, reflecting the very essence of the place. In this way, the restaurant celebrates the love of Ashkenazi cuisine, a history that has traveled from Eastern Europe to Jerusalem, before revealing all its flavors in Paris.
In this warm and friendly setting, Michelin-starred Chef Assaf Granit reinvents traditional dishes with a touch of refined creativity and gourmet flair. A true virtuoso of Israeli cuisine, the chef has taken up the challenge of showcasing modest, little-known Ashkenazi cuisine, through a menu of specialties spiced up with a contemporary twist. He pays tribute to his heritage by dusting off the recipes of his childhood, often considered austere, to make them glamorous and irresistible!
Sitting at the counter, front-row to the ballet of cooks, we begin our tasting with the Chouchou and the Eastini, the two best-selling cocktails of the address - one tangy and very sweet, the other full of character reserved for fennel lovers. An inventive menu that travels the length and breadth of the Mediterranean, as does the wine list, some of which is kosher.
Meanwhile, a melt-in-the-mouth roasted beet with feta cheese and a delicate gravelax with arak and mustard pickles open the ball of taste buds.
The taste matches the visual: tasty, surprising and so light!
Without transition, we move on to pretty ravioli generously stuffed with beef or lamb, before moving on to a variation on the standards: beef goulash with gnocchi, shredded chicken with carrot pickles on lachoch (Yemeni bread).
To round off the dinner in style, we fell for the spicy, regressive compote with its creamy fennel ice cream, and the traditional chocolate babka!
From starter to dessert, each dish is a striking discovery, an adventure that transports us from one mouthful to the next in gourmet land. With its refined combinations, creativity, textures and divine flavours, Boubalé has no shortage of assets to seduce us - the hardest part will be leaving...
We were all the more won over by the setting, imagined in the spirit of dachas (Slav secondary residences in the countryside), is embellished with crystal glasses, porcelain, silverware, velvet and frescoes on the ceiling, enhancing theelegance and intimacy of the place. A setting almost from another time, that of a forgotten world reborn before your very eyes. Ifauthenticity reigns within its walls, thehospitality of the place makes you feel at home. Not to mention the music, which inevitably leads to an evening of dancing around the tables.
