Blend, the ever-popular burger in Paris

Nearly 15 years after the opening of its first location, Blend remains one of Paris's leading burger brands.

Although Blend is far from being a newcomer to the capital, it deserved its place in our pages. And now it has. Opened in 2011 in the Sentier district, the first Blend restaurant in Paris was quickly followed by the opening of other addresses - on the Charonne side, at La Madeleine, where you can enjoy an American-style breakfast in addition to the classic menu, and between Place de la République and Place de la Bastille, nestled on Boulevard des Filles du Calvaire.

The latter is Blend Beaumarchais, which, while not the largest of the family, is undoubtedly the most intimate, with its allure of an American diner straight out of an Edward Hopper painting. At Blend, the star of the show is of course the burger, made with choice products sourced in France, but with the generosity of American burgers.

Among the Maison's short menu, the two must-tries for us - tasted time and time again, our Sunday best friends pick up: the Signature burger (blend of matured beef, emmental, blue cheese, caramelized onion compote, Blend garlic mayonnaise and spinach shoots) and the Smash burger (one of the best in Paris, alongside Blossom and Specimen) with its double dose of cheese - 18-month aged cheddar and American cheese.

Blend also likes to play to the clock, offering limited editions throughout the year, straight from the team's brains. Like right now with the excellent Came burger (blend of matured beef, quarter of AOP Normandie camembert, caramelized bacon with maple syrup, Blend American mustard with honey and cumin, artisanal cider jelly, lamb's lettuce) dripping with cheese and vice.

But sometimes, the brand also collaborates with friends from all over France, and the result is some pretty good stuff. Until the end of the summer, discover the Dallas burger by chef Mattias Castro, a little marvel that plays on sweetness and spiciness, sweet and savory. Inside this Franco-Belgian burger, under the potato bun by MOF Frédéric Lalos, you'll find fried chicken, cider vinegar mayonnaise, life-saving cucumber pickles, coriander and a good dose of Brussels Ketjep's cult Dallas sauce.
