A mainstay of Paris street food, kebabs satisfy every appetite, day and night. Known as a variety of grilled meat dishes in many Middle Eastern countries, kebab as we know it refers specifically to a sandwich filled with spit-roasted meat, popularized in Berlin in the 1970s by Turks exiled in Germany.
Today, the kebab has crossed European borders, but still takes the form of a round, oblong loaf or patty, made with finely sliced, spit-roasted meat and crudités (the famous salad-tomato-onion), accompanied by French fries and sauces. White sauce, harissa, Algerian, samurai - the choice is yours!
Depending on its country of origin, the name of the kebab varies: it's called pita, kebap or gyros in Greece, kebap, döner or döner kebap in Turkey, dürüm when it's prepared in an unleavened bread cake, and of course Greek sandwich or Greek sandwich in France and particularly in the Paris region, a nickname it takes from the 80s, when Greek gyros vendors were the first to market this type of sandwich in the 5th arrondissement.
