Looking for a delicious and original log that's out of the ordinary? Then opt for this one from La Scène, a real editor's favorite. This year, Stéphanie Le Quellec and Pierre Chirac set off to meet Roland Feuillas, founder of Maîtres de mon Moulin, a 100% Natural Bread ecosystem in Cucugnan. The discovery was so rich that it inspired this year's Christmas creations. A Yule log based on the codes of living bread is sure to arouse curiosity;
Épi d'hiver is the name of this atypical log, a tribute to ancient wheat. It features a crunchy caramelized crumble dough made with Roland Feuillas flours, a soft bread cookie, a creamy rye sourdough and a toasted bread mousse. The log is then covered with a very fine icing to give it a beautiful golden color.
" When I discovered Khorasan wheat and its gourmet taste, it just clicked: I had to make a cake with it. Very rich in flavor, this ancient wheat brings a lot of natural sweetness to the log", says Pierre Chirac.
To keep this creation intact, Stéphanie Le Quellec and Pierre Chirac have designed a superb poplar wood box inspired by the bread cellars of Roland Feuillas: the log cellar! A log for 6 to 8 people costs €95, and can be ordered on the La Scène restaurant website from October 1. It can then be collected from December 15 to 26, 2021.
In addition to the delicious Yule log, La Scène also offers a fine Christmas collection to enhance your table: brioche truffle sausage, filled shortbread and Khorosan bread are all on the festive menu. And let's not forget the beautiful galette des rois, obviously created with Roland Feuillas flours, to be enjoyed in January. Count on 45€ per galette for 6 gourmands.
