Easter 2025: Maxime Frédéric's sublime chocolate bell at Cheval Blanc Paris

If you're a fan of chocolate and the divine delicacies imagined by Maxime Frédéric, you'll find a sublime chocolate creation waiting for you at Cheval Blanc Paris this year. Arguably one of the most beautiful creations of Easter 2025, if not the most beautiful, the Cloche de Pâques is sure to create a sensation on your Easter table.

Once again this year, pastry chef Maxime Frédéric of Cheval Blanc Paris surprises us with an original creation that's off the beaten track. In this cloche, everything can be eaten and everything is garnished with different flavors and textures. All the elements are made separately, and come together to form a cloche that actually works when the wheel is turned.

Conceived as both an architectural and gourmet work of art, La Cloche de Pâques 2025 is inspired by the Notre-Dame bumblebee, the cathedral's most imposing bell, recently reopened to the public. Made in dark and milk chocolate, this creation plays on the Parisian references and ornamental details of the Cheval Blanc Paris building, while evoking the world of the foundry.

The dark chocolate base holds a Tahitian vanilla caramel tablet, accompanied by a hazelnut praline and Lot chips. On this base rest two milk chocolate belfries, each housing a tablet topped with a biscuity praline, both crunchy and melting. The steering wheel, decorated with Art Nouveau passiflores, emblems of the building, allows the bell clapper to swing, for a visual and tactile experience. The chocolate yoke, imitating wood, conceals chocolate-coated caramelized hazelnuts.

The bell, made entirely of dark chocolate decorated with arabesques, is enjoyed as a beggar with dried and candied fruits: orange, almonds, hazelnuts and pistachios make up this elegant, gourmet finale. This playful, poetic work evokes childhood memories and pays tribute to Parisian heritage.

We love the different textures and the different tastes of the different pieces. One thing's for sure: there's never a dull moment. For our part, we love the biscuity praliné and the richly garnished mendiant bell, which wakes us up with its ginger notes. This creation is aimed at those in search of excellence who don't hesitate to pay the price. In terms of flavor, it's just as suitable for adults as it is for children, who will love its playfulness and different flavors.
