Maison Plume is the name of this coffee shop on the République side of Paris, created by Tara Pidoux, a gluten intolerant gourmet with diabetics in her family. She had the idea to offer a new pastry shop without gluten on the one hand, but also without sugars, with low glycemic index on the other hand.
To do this, she creates her own mixtures of flours based on lupin flour, brown rice flour and almond powder. Each pastry and sweet is tested on a panel to see if the glycemia increases reasonably or not. Most of the ingredients are chosen to be organic and fair trade.
To give its sweetness, Tara has opted for a stevia finely chosen for its lack of taste. No more coconut sugar or agave syrup, Tara has opted for the total without added refined sugar.
There are also gourmet proposals for Vegans, without eggs, milk or lactose. Apple almond or chocolate fondant are among the cakes that await you. As for drinks, vegetable milks such as oat milk or almond milk can replace your lattes if you wish.
In any case, for the taste, nothing to say, we adhere. Whether you are gluten-free or sugar-free or not, you will enjoy it. Between the lemon tart, the vanilla-pecan feather or the chocolate feather, no problem, it's creamy.
At Maison Plume, the menu changes regularly according to the seasons and discoveries. Next on the menu, a hazelnut cabbage, a chocolate pecan royal and an apple-ginger amandine are in the bins.
You can sit there every day except Monday from 11:00 am (11:30 am on Tuesday and 10:00 am on Saturday) until 7:30 pm. Pretty seats and cosy benches and a small vintage terrace form the decor. We like the pretty crockery and the welcoming atmosphere of the place.
