Israeli street food isn't just about falafel sandwiches, far from it! One of the other must-have sandwiches in Israeli cuisine (but also found in Iraqi gastronomy) is undoubtedly the sabich, which we've already introduced to you at the Dizen counter.
Inside a soft pita bread is a delicious combination offried eggplant, 4-hour marinated hard-boiled egg, herbed potatoes and a blend of four traditional sauces: hummus, tahini, amba (a sweet and sour fermented mango sauce) and zhoug (a green chili and coriander sauce).
At La Sabicherie, a small street-food counter founded by Solal, sabich is obviously king, and can only be eaten to go! In this new year, building on the success of its first address in Bastille, La Sabicherie is opening a new sabich counter in the 9th arrondissement, near SoPi.
Here, the sabich has all the qualities you'd expect from a sabich: a regressive and comforting side, a generous format and a soft, well-filled bread, a level of spiciness adaptable to palates and desires, and affordable prices: count €9 for a sabich, €11.5 for a sabich in bowl format and €4 for home fries.
But there's no better accompaniment to this competitive sandwich than the great classics of Middle Eastern cuisine: hummus (5€), labneh (5€), a refreshing lemonade (3€) and, to finish off on a high note, one of the two mouhalabieh on the menu, either sesame or pistachio (both 4€).
