Slice pizzas, lobster rolls, pancakes, smash burgers and mac and cheese... In Paris, many North American specialties have crossed the Atlantic Ocean to find their way into Parisian street-food stalls. But if there's one specialty that hasn't yet found its way to the capital, it's theegg bun, an essential part of any good Californian meal on the run.
This is now the case at Round Egg Buns, a charming Californian-style restaurant that has been open for a couple of years on the Canal Saint-Martin, and from which emanate as many notes of rap us as good smells to get you in the mood. With its minimalist decor, rough-hewn walls and long counter where you can grab a sandwich, the place has everything you need to enjoy a convivial meal.
At the helm of Round Egg Buns are Olivier and Simon, supported by Melvin in the kitchen, who createegg buns to suit every taste. But above all, they focus on good, carefully selected produce. The products are fresh, sourced from local producers, the meat comes from Corrèze, the bacon is homemade, the eggs are free-range, the sauces and pickles are, of course, homemade, as are the fries and coleslaw.
It's a far cry from the often less discerning American quality standards, and the same goes for the potato flour buns - thekey element in any successful egg bun- which here are as fluffy as they are bouncy. So what's inside these Round Egg Buns egg sandwiches?
Of course, theegg is at the heart of every sandwich, whether sunny-side up orscrambled. The rest is just creativity, with 5 recipes, each more enticing than the last. For our part, we loved the Scramble (€8.50) with scrambled eggs, lots of melting cheddar and chives, candied onions and homemade sriracha mayonnaise, a comforting sandwich that takes up the markers of the American breakfast.
The same regressive pleasure can be had with the Sunny Smash (11.50€), with its ultra-crispy smashed beef on the edges, accompanied by a fried egg, cheddar cheese, fresh red onions, pickles and sriracha mayonnaise. Menu prices are low, between €13.50 and €16.50 depending on the sandwich chosen, with side and drink or cookie.
Speaking of side dishes, while the French fries (3.50€) fit the bill perfectly, we'd advise you to go for the hash browns (4.5€), golden patties of browned baby vegetables, absolutely addictive. We'll be back at Round Egg Buns the next time we stroll along the Canal Saint-Martin!
