We know 3-star chef Alain Ducasse, we know he was creating chocolates, and now as a coffee roaster with his Café Manufacture set on rue Saint Sabin, a stone’s throw from his Manufacture de Chocolat.
For this new adventure, Alain Ducasse asked twice French champion in coffee roasting in 2017 and 2018 Veda Viraswami. In the Bastille neighborhood, the champion roasts and blends grands crus coffees in a beautiful manufacture open onto Paris. Think, roasting machines that can be seen from the street, working coffee all day long and filtering the air with coffee…
Alain Ducasse knows this move is a winning move: you have to see how cocoa smells from the Manufacture Chocolat attract passersby on rue de la Roquette to understand that the return of open-plan manufactures is a good strategy. We can already imagine the smells of coffee filling the rue Saint-Sabin and calling our names for a coffee break!
In his Manufacture Café, Alain Ducasse works with 7 grands crus coffees discovered during his many trips to plantations, each one of them is roasted in live with tradition. Among the grands crus, we name the Geisha plantation from the hacienda Mil Cumbres set west to Panama at the food of the Barú volcano, exclusively produced for the Manufacture. World champion Veda Viraswami also creates 2 blends!
In addition to coffees to buy and expressos to enjoy on the spot, Manufacture Café offers us to taste to cappuccino with hazelnut reduction, Viennese coffees and coffees with cascara (cascara being the crushed coffee pulp), served in beautiful glass cups that will allow you to appreciate coffee tones.
If you wonder why Alain Ducasse throws himself into coffee, it’s because of his “preoccupation as a cook”, because coffee is often the last flavor we taste at the restaurant and “it should be at the level of the meal”. So, the chef doesn’t stop at the barista world but goes even further with “cafeliers”, men and women who combine coffee know-how, the skills of serving as a maître d’hôtel and the talent to prepare coffee-based drinks.
He says: “our ambition is to build a franchise of excellence in which each link is important, from the producer to the cafelier who hands you a cup of coffee”. We agree with him!
