Jessica Préalpato unveils her natural, healthy snack at Hôtel San Régis

The San Régis Hotel in Paris celebrates its 100th anniversary and welcomes Jessica Préalpato to redefine the art of tasting. From September 20, 2023, this renowned pastry chef, voted Best Pastry Chef in the World in 2019, unveils a culinary experience that combines nature and gourmet delights.

We'd missed her since she left the Plaza Athénée. We couldn't wait to see her again, and now Jessica Préalpato has returned to the Hôtel San Régis to delight and amaze us with her creations, which are as healthy as they are creative.

The Hotel San Régis, a historic establishment in Paris's 8th arrondissement, has chosen to mark its centenary with a groundbreaking collaboration. Jessica Préalpato, former pastry chef at the Plaza Athénée and crowned"World's Best Pastry Chef" in 2019, has joined forces with the hotel's owners, the Georges sisters, to offer an unprecedented gourmet experience. Inspired by their shared family values, they have decided to reinvent this moment dedicated to gourmandise.

For her tea party, La Cheffe invites us into her bold universe. The gustatory adventure begins with an exclusive infusion from the Parisian House of 88 teas, harmoniously paired with each stage of the tea party. Gourmets are then invited to reminisce about childhood with a box of cookies, evoking those delightful moments when we discovered our favorite treats with wonder.

On the menu of discoveries:

  • Nostalgiccookies, true Proust's madeleines. Petit beurre San Régis with chestnut flour and prunes, and pan-fried waffles with Chambron family lime-blossom honey, farmhouse raw cream and plum marmalade. We love the Alfajores topped with a rosehip compote, crumbly and astonishing. The box comes with fresh fruit (in this case, grapes), like little candies.

  • Cerealpuffs with ancient wheat, cereal paste and Sarawak black pepper. We love the combination with the crunch of pumpkin seeds.

  • Signature dessert: raspberries from Christophe Latour, with watercress and fennel seeds. It may seem surprising, but watercress blends particularly well with the acidity of raspberry and the pep of fennel.

  • And finally, a chocolate cake to share, featuring Sao Tome Nicolas Berger 65% chocolate, to be enjoyed with Kerbastard reduced raw farm milk ice cream. We love the warm-cold combination of the sweetness of the cake and the roundness of the sugar-free milk ice cream.

This snack, designed by Jessica Préalpato, contrasts with traditional offerings. Those already familiar with her work will find her unique signature blend of ancient flours, unrefined sugars and natural ingredients. Novices, meanwhile, may be disoriented by new flavors or surprising textures, depending on the product. In any case, it's an opportunity to discover a modern approach that respects nature.

Tasting takes place in the cosy setting of the hotel's Les Confidences restaurant. A place to relax, where every mouthful is an invitation to travel. And for younger guests, an introduction to taste will be offered on September 27, enabling them to discover this unique experience. To take part, registration is open on the San Régis website.

Le Goûter du San Régis by Jessica Préalpato has been on offer from Wednesday to Saturday, from 3:30 to 5:30 pm, since September 20, 2023. To indulge in this delicious experience, expect to pay 65 euros per person, and for those wishing to add a touch of sparkle, the price is 85 euros with a Laurent Perrier Rosé champagne.
