Lovers of bistronomic fusion cuisine, SHIRO will transport you from Paris to Tokyo with its highly graphic and elaborate cuisine.
With a distinctly French culinary base, chef Ryo Miyazaki creates an inventive cuisine par excellence, adding a Japanese touch with ingredients, seasonings and preparation techniques straight from Japan.
Spacious, elegant dining room on two levels
The long dining room features a large counter where you can sit and enjoy the chef's cuisine, with a direct view of the brigade cooking in front of you. Tables are well spaced throughout the room, allowing for a quiet business lunch or an intimate romantic evening for two.
A staircase adorned with stunning wooden structures leads upstairs to a private lounge for private events.
A humble and talented Japanese chef
Chef Ryo Miyazaki creates a new menu every month, with colorful, meticulously-crafted creations. A refined cuisine with well thought-out combinations. He makes a point of working with seasonal produce while preserving its original character.
Bistronomic Franco-Japanese BENTO every weekday lunchtime
The best thing about SHIRO is their famous BENTO at lunchtime (weekdays), with 9 seasonal dishes composed by the chef. There's an assortment of hot and cold small plates and a dessert.
At €35, it's a great opportunity to discover SHIRO.
OMAKASE, the chef's Carte Blanche tasting menu!
For dinner, don't hesitate to opt for the OMAKASE menu, available in 4, 5 or 7 stages.
A veritable gustatory voyage through an amuse bouche, starters, main courses and dessert.
Enjoy the low-temperature monkfish with pea cream and yuzu seasoning, or the salmon scallop tartare with salmon roe and a spinach mozzarella cream.
As beautiful as it is good, the foie gras terrine with strawberry powder, apple coulis, gingerbread and honey, the unlikely combination of foie gras and strawberry, is a discovery. Meat lovers will be won over by the Wagyu fillet with port sauce and its accompaniment of romanesco cabbage and beet.
On the seaside, we'll love the sea bass fillet with vermouth sauce, accompanied by a host of seasonal vegetables (green asparagus, button mushrooms, zucchinis, carrots & spinach shoots).
The chef also likes to cook lobster, which is a regular feature on the 7-step OMAKASE Menu, and his version of this chic crustacean on its own bisque and parmesan espuma is excellent.
When it comes to dessert, consistency is always the order of the day, with creations that are as visual, gourmet and not too sweet as the Japanese know how to make, with a homemade strawberry mochi that's completely insane, or the Caribbean cocoa serpentine with its basil quenelle, raspberry marmalade and dark chocolate crumble...
