Chef Eloi Spinnler, star of the social networking scene, finally opens his second restaurant in Paris. Named Colère, it follows on from his first restaurant, Orgueil.

With 220,000 followers on Instagram and 137,000 on Youtube, chances are you've already caught a glimpse of his face - and his unstoppable harness of knives - in a cooking video. Chef Eloi Spinnler, star chef of social networks, finally opens his second restaurant in Paris, teased for many months.

And to this end, the chef continues his exploration of the seven deadly sins. After Orgueil in the 11th arrondissement, he's now turning his attention to Anger, opening his second restaurant on the gourmet Rue Richer. But there's no anger in sight, just healthy anger, driven by a burning desire to promote better eating and consumption.

As at Orgueil, Eloi Spinnler offers altruistic, zero-waste cuisine, spiced up in the French style, in a décor imagined by the architectural firm Friedmann & Versace, which favors second-hand materials. The centerpiece is a fireplace in the shape of a dragon, hand-carved by artisan Gesso, and banquettes adorned with a fabric that takes up the theme of mythological creatures, featuring phoenix motifs.

Aware of the environmental issues of our time, and marked by the food waste he witnessed in the great Houses he frequented during his apprenticeship, the chef decided to adopt a zero waste policy. Convinced that nothing is wasted, everything can be transformed, he makes the most of every part of fruit and vegetables - skin, flesh, seeds - focuses on offal rather than noble parts, uses carcasses to make sauces, and reduces his carbon footprint by working with local producers who supply him with only seasonal produce - fruit, vegetables, but also fish.

LikeOrgueil, which revealed a hidden room next to the kitchens where you could enjoy a different menu from that of the restaurant, Colère is also divided into two distinct parts. On the one hand, the bistro side is open evenings and at lunchtime on weekends for dishes to share, and at lunchtime on weekdays for affordable lunch formulas (18€, 23€, 28€). On the other, the theater side, which seats up to 15 people and is hidden behind a heavy curtain, awaits you with an immersive experience facing the open kitchen, every evening at 8pm with a 7-course menu (78€, 122€ with food and wine pairings) and a 4-course menu (50€, 80€ with food and wine pairings) at lunchtime from Thursday to Sunday.

On its menu, Colère reveals French cuisine enriched with a spicy touch from elsewhere. Discover, for example, the Russian roulette, a flaky brioche filled with surprises when cut (11€), the volcano egg with squid ink and chili mayonnaise (9€), Camargue rice cacio e pepe, red wine reduction, egg yolk and rice chips (15€), gnocchi à la romaine, spinach, comté cheese and poached egg (16€), salt-crusted hake wrapped in cabbage leaf and shiso (41€), vegetable tarte tatin with lemon cream (20€), duck parmentier with meat jus and smoked butter mashed potatoes (24€), marbled Tarn pork chop, seared in the dining room on a salt plate in the pierrade style and served with pommes dauphines and watercress coulis (39€), or vanilla flan with chili caramel (11€) and chocolate soufflé with kasha ice cream (14€) for dessert.
