In the heart of the capital, in the rue de Montmartre, Tartelettes is one of those good addresses that promises us great culinary experiences through its tarts with creative, not very sweet recipes that evolve with the seasons. For this Christmas 2024 in Paris, she invites us to discover her creations, which evoke the spirit of the festive season, and which could well make a lasting impression when the time comes to bring your banquets to a close.
The result is a collection of gluten-free logs inspired by the seasonal and timeless creations of this inventive pastry. The Iranian pistachio, faithful to the taste of this famous dried fruit, is full of gourmet goodness, and takes us on a journey through a range of textures, from crunchy to whipped. Its forest counterpart, hazelnut, is also featured in a generous, not-too-sweet log that should delight praline aficionados. For taste buds in love with tangy flavors, the log with three lemons-black, yellow and green-should hit the bull's-eye. After all, it's inspired by the lemon meringue pie, the great indulgence of sweet tooths!
Our favorite is the coconut-pandan log. This combo, unusual for a Yule log, is found in a more classic form of this festive specialty, using the traditional rolled pastry. Lightly sweetened, it's the perfect way to round off a light meal. Pandan is an aromatic plant widely used in Southeast Asian gastronomy, with a delicate taste and hints of vanilla and brown roast. The very subtle flavor of pandan is clearly evident in this original Yule log, which is a perfect match for coconut, with the added bonus of a pandan & yuzu confit that adds a fresh, peppy note to the whole.
