Discover Tranché, the new modern bakery that opened its doors in December 2022, at 62 rue Marguerite de Rochechouart, in the 9th arrondissement of Paris. This gourmet address offers a tempting range of breads, pastries and snacks, while respecting traditions and focusing on quality products.
An artisanal know-how and a passion for natural leavening
Tranché puts forward the expertise of real tourmaliers who perfectly master the puff pastry, a profession that tends to disappear in the face of industrialization. The bakery also relies on natural leavening for its breads, offering incomparable flavors and digestibility. Among the signature breads, we find the low gluten small spelt, the rye pie, the Scandinavian bread and the seasonal loaf.
Quality ingredients for tasty products
Tranché chooses to use top quality ingredients, such as organic flour from Moulins Bourgeois, an independent family mill supplying 100% French cereals, or Montaigu AOP Charentes-Poitou butter. Fruits and vegetables are sourced by Broko, a new generation supplier that democratizes access to fresh produce in a short circuit.
A generous and gourmet snack offer
In addition to breads and pastries, Tranché offers a varied and greedy snacking offer, with sandwiches like the classic Ham-Butter-County or the Chicken-Spinach Club Sandwich. For small pleasures, discover the Winter Focaccia with pumpkin and feta cheese or the salted rolls with pesto, cream, bacon and chorizo peppers.
Collaborations with actors of the food scene
Tranché regularly collaborates with actors of the food scene, like Margot Masson and Aymeric Pinard, who elaborated a Grilled Cheese with sourdough bread, Saint-Nectaire, mozzarella, mushrooms and caramelized onions.
A warm and friendly place to live
The Tranché bakery was designed as a place to live, with a warm decoration, comfortable spaces and a welcome adapted to teleworkers, families and passers-by. The store offers both in-store and take-away, with the possibility to order by Click&Collect or to have your order delivered anywhere in Paris.
A passionate team at the helm
Tranché was founded in 2022 by Marie Debié, who studied at Big Mamma and obtained a CAP in bakery as a self-taught. The co-founders of Tranché, Marie Debié and Augustin Rivoire, are supported by a talented team, including Alexis Ragot, head baker, and Alistair Smith, pastry chef and Best Apprentice of France 2021.
Workshops to share the passion of bread
Tranché's ambition is to share its passion for bread and natural sourdough with the general public. Thus, the bakery regularly offers workshops for adults and children, led by Marie Debié and her team of experienced bakers. Participants can learn the secrets of kneading, shaping and baking, and leave with their own creation.
A commitment to the environment
Concerned about its environmental impact, Tranché has taken several initiatives to reduce its ecological footprint. The bakery favors local suppliers and short circuits, favors biodegradable and compostable packaging and has implemented a deposit system for reusable containers. In addition, the team works with the association Too Good To Go to avoid food waste by offering unsold goods at reduced prices.
The store, open 7 days a week, has been designed as a warm place to live, with the look of a coffee shop. Customers can comfortably sit down to work, have lunch with their family or simply enjoy a gourmet moment.
Located in the heart of the neighborhood, this friendly bakery invites residents and visitors to take a break from their day. One can come and enjoy a coffee, a latté or a freshly made orange juice, while tasting a wide range of pastries and cakes or even have lunch on the spot with its wide range of snacks.
The bakery's traditional baguette is offered at an affordable price of one euro, despite the current economic challenges. The croissant, sold at €1.40, owes its quality and price to the use of top-of-the-line butter and the hard work of a real team of touriers to offer an authentic, artisanal croissant.
For those looking for this bakery's must-have items, don't miss the cream puff, brookie and flan, which are among the establishment's best-sellers. The brookie, a hybrid between a brownie and a cookie, is a real treat with its brownie base, crumbled cookie layer, praline and pecans. A unique culinary experience not to be missed. And for lemon pie lovers, this one is very, very sweet.
Thanks to its success, the house is about to open a second store in June in the Batignolles district.
