Suelo, the festive Spanish restaurant in the Golden Triangle

Spanish restaurant Suego opens its doors in September. On the program: Iberian specialties upstairs and creative cocktails in the speakeasy.

A ray of sunshine will light up the Golden Triangle next autumn, with the opening of Suelo, a new Spanish restaurant on the corner of rue de la Tremoille and rue Boccador. A future mecca for Iberian gastronomy, brimming with colors, scents and flavors, Suelo invites lovers of Mediterranean cuisine to sit around its large tables of friends, along its central bar for a drink, on its large terrace open in fine weather, and even opposite the open kitchen, surrounded by a counter and a stall dedicated to the day's catch, where you can choose your fish directly.

Suelo's exotic decor, orchestrated by interior designer Lázaro Rosa Violan, takes gourmets to the South of Spain, with its large bay windows, hand-painted azulejos and multiple works of art, including an XXL mural hand-painted by Chloé Costes, a bespoke white plaster fresco by Tollis Studio, inspired by Barcelona's famous Parc Güell, and a painting by Andres Valencia, dubbed the 'new Picasso' at the age of 12.

In the dishes to be shared, the great Spanish and Mediterranean classics come alive, revisiting the finest Iberian products with contemporary twists: shrimp Carabineros, king crab, ham, seafood and Basque cake are on the menu, as well as more luxurious dishes such as caviar, red tuna and wagyu beef. The kitchen features a Josper charcoal oven, inspired by Catalan know-how.

In the glasses, the finest Hispanic, French and Italian vintages will delight aesthetes, as will champagne and creative summer cocktails . These clever beverages are also available at the Suelo speakeasy, an extravagant bar hidden beneath the restaurant and open Wednesday to Saturday from 7pm to 2am.

Note that this is not the only opening by co-founder Vincent Biessy next autumn. This jet-setting nightlife figure is also opening UNI Paris, a stone's throw away.
