At La Cantine du Troquet, what we like are good flavors and buddies. The best way to enjoy this brasserie is to go with your squad to eat a generous cuisine inspired by the South-West terroir revisited by Christian Etchebest.
Here, one comes and goes with a smile. It’s normal since the watchword at La Cantine du Troquet is: conviviality! The décor takes us straight to the warm atmosphere of the eatery, like the team we really appreciate. This 6th canteen is the fruit of a close work between chef Christian Etchebest and his manager Franck Andrault who welcomes you like a long-time friend.
We sit then at the table and we choose what we want. As a starter we start with refreshing flavors that are very pleasing in these beautiful days. Asparagus from the Landes served with capers, tomatoes, parmesan biscuit shake out taste buds up and trigger our appetite. The marinated salmon is served with a red bell pepper coulis, cottage cheese and a dash of pesto sauce, the whole scented with dill, ending in a blend of flavors as surprising as pleasant likely to delight all sweet and savory enthusiasts. But, since the sun has decided to stay in the capital, we can also go for the razor clams à la plancha cooked with herbs and black pepper.
Our taste buds are very happy, and we are already impatiently waiting main courses. At the sound of people laughing and talking in this restaurant where relaxation rules, plates arrive, and our mouths are watering. If you’re more a fish person, the thick slice of pollock will enchant you with its flock of soft vegetables. But if you think that a meat-less meal isn’t a true meal, we suggest you go for the slice of lamb served with its juice and scented with chives and shallots. As sides, you can enjoy homemade French fried, mashed potatoes with basil or a cooked salad based on tomatoes.
Despite the hearty portions served at Troquet, love of good food makes us keep some room for dessert and we can be proud of ourselves! On the menu, we can choose between a seasonal fruit pie, a rice pudding, a rum baba, a chocolate quenelle or a “feuille à feuille” with seasonal fruits. The meal ends on a flawless note!
