Do you love caviar? Then this news should please you. The famous Maison Petrossian, founded in 1920, is opening a Petrossian Restaurant on boulevard de la Tour Maubourg, opposite its historic boutique. Presented in sometimes surprising forms, caviar is sublimated. The king of the menu.
On the menu, two formulas share the limelight. The first, "Le Caviar Absolument", offers raw caviar in its simplest form, accompanied by toast and blinis. And every day, Restaurant Petrossian offers a selection of three species, with different flavors and textures.
The more creative "Le Caviar Autrement" formula invites you to discover surprising culinary combinations created by Chef Renaud Ramamourty. In this formula, caviar is enjoyed in all its forms: pressed, dried, matured, liquid... There's something for every palate!
Starters include a perfect egg, milk emulsion, cauliflower, liquid caviar and mature caviar (36€), langoustine ravioli with shizo, press juice and liquid caviar (27€), a fine tart, creamy leeks and mature caviar alverta (34€) or just-cooked red tuna, green asparagus and dried caviar (35€). We personally tasted the first two, and loved them.
For the main courses, the decision is made between 6 proposals. We chose the heart of beef fillet with dried caviar Viennoise and mashed potatoes (45€) and the turbot confit, orange white asparagus and crispy maviar (60€). And what a pleasure it is to taste caviar in such astonishing forms.
Every lunchtime, a two- or three-course lunch menu is also available, with a choice of two starters and two main courses, plus dessert. Without caviar, of course, but not without goodies inside!
