We all agree that there's nothing like a nice little salad on a terrace on a hot summer's day. But for a change from the usual green salad without compromising on freshness, we've got a good address to give you: it's just opened its doors!
Head south of Pigalle to discover Pez, the brand-new street-food ceviche restaurant. Far from the gastronomic idea we have of this specialty in France, ceviche is THE casual dish eaten on the go in Peru. You can find it on every street corner, served in generous portions and in all simplicity. Louis-Marie Giudicenti, Victor Lognoné and Valentin Thiriez opened Pez! with the idea of restoring the street-food aspect of ceviche.
The (short!) menu features four ceviches with marinades based on fresh, well-sourced produce, highlighting saithe from sustainable fisheries. Discover the traditional Patrón ceviche with its "leche de tigre"; the Gringo ceviche, inspired by Polynesian flavors, with coconut milk, garlic and minced carrots; Papi Chulo ceviche, with pomelo, honey, shallots and chili paste; and Mamacita ceviche, with orange, passata and olive oil .
To whet the appetite, gourmets can also opt for French shrimp with mayonnaise, oysters from the Ile d'Oléron with a shallot, lime, chilli, coriander and olive oil sauce, as well as gazpacho with red and green peppers, garlic and lemon, and of course the unmissable guacamole. Did you say gourmet?
To be accompanied, of course, by a cocktail, a glass of natural wine or a craft beer on the small terrace, which looks like a colorful beach hut!
