In the new year, chef Julien Dumas takes the plunge and opens his first restaurant as chef-owner in the Paris suburbs. Having worked at Lucas Carton and Saint-James, the now forty-something chef continues his personal commitment to the environment and what the planet has to offer, in La Garenne Colombes.
Rendezvous next February to see what it's all about at Maison Lagure, an auteur bistro focused on seafood. It's an obvious choice for Julien Dumas, a native of Brittany, who wishes to honor a "rich but threatened ecosystem, through his refined and technical dishes, sourced in an uncompromising manner".
Partnered on this project with Salwa Abi Ghanem, the chef also called on young chef Lucas Boisseau to assist him in the kitchen, having spent his entire career working alongside him. Architecture and decoration were left to Studio Ambiant.
"The lagure is a dune plant that prevents the coastline from shrinking. This year will also be a great story, the first stone in the series of projects I'd like to bring to fruition over the coming months and beyond. (...) On a day-to-day basis, the kitchen will be run by a man I watched grow up: Lucas Boisseau. I'll be there to continue supporting him and building the menu with him," the chef detailed on his social networks.
He continues: "Maison Lagure will be a town house with dishes centered on the product, thanks to all the producers I love and their commitment, as strong as my own. The wine list will be of the highest quality, but at reasonable prices. This work is being carried out by my friend and associate Samuel Ingelaere. So let's hear it! No more doubts, this time it's on! Stay tuned, because this is just the beginning of the 2025 announcements."
