But be careful! These aren't just any oysters! We're talkingBelondine oysters here. For the record, these oysters require no less than 3 years of maturing at theCadoret oyster farm. They take their name from the Belon river into which they were subsequently transported. The result? Exceptional oysters with a strong iodized taste that can be enjoyed without moderation. And what better accompaniment to this sea-flavored tasting than a glass of white wine? Le Boeuf sur le Toit 's wine list is particularly extensive, but two of its wines are particularly well-suited to this offer. These are Pascal Jolivet's Muscadet, distinguished by its finesse, and Muscadet Sèvre et Maine sur lie, with its notes of citrus and lime blossom.
