The little prince of street-food seems unstoppable. Just over a year after opening his Janet stall, which doubles as a grocery store worthy of a New York delicatessen , Moïse Sfez has just opened a coffee shop in the Marais district. And while Janet was named after her grandmother, this new café-restaurant pays tribute to Janet's husband, her grandfather Maurice.
Moïse Sfez has been dreaming of this Maurice Sfez Café all his life, with one idea in mind: to offer "the best Liège waffles in the capital", no less. Naturally, such a statement made us want to discover the place and the waffles in question, to see what all the fuss was about...
In fact, knowing that Moïse Sfez turns everything he touches into gold (his lobster rolls have won awards and praise; his pastrami sandwiches are worthy of a New York grocery store), we suspected we were in for a treat. Bingo! Moïse Sfez's Liège-style waffles are melt-in-the-mouth and perfectly caramelized on the outside. It must be said that it took the young chef some time to find the perfect recipe! Maurice Sfez Café offers them individually (4.50€), in packs of 5 (22.50€) and in mini packs of 10 (30€).
Honey butter toast (€3.50), a cube-shaped sugar loaf, completes the sweet part of the coffee.
On the savoury side, the coffee shop gives pride of place to Anglo-Saxon-style muffin sandwiches, and we can tell you straight away: Moïse's egg and cheese will quickly make you forget those of a certain brand with the big yellow -M-, for a price not so far off - 7€ for the e&c muffin, 9€ for the omelette muffin, 11€ for the salmon and cream cheese muffin; all recipes can be declined on toast.
Theegg and cheese is demonic, with a runny yolk, melting American cheese and pickle sauce... It's like McDonald's, but so much better that it's gobbled up in a flash.
The sweet and savory menu is rounded out by a fine selection of coffees from Moïse's roasting facility, and Australian-style offerings based on classic and more original lattes (spanish latte, orange blossom latte, vanilla bean latte), as well as a unique creation, Freddos©, cold coffees in a rather fun format - in cans - in chai (€7.50, very good) or vanilla matcha (€6.50) versions.
