Every year brings a newAlan Geaam opening, and 2024 is no exception. In January 2024, the Michelin-starred chef will inaugurate Qasti Green, an all-vegetarian Lebanese restaurant on the gourmet Rue des Jeûneurs. Following in the footsteps of Qasti, and always with the desire to revive his childhood memories of the markets of Lebanon, Alan Geaam is writing this new chapter as an ode to plants, from the walls to the ceiling, via the plate.
To achieve this, the chef has surrounded himself with Zeinab Hachem, his niece whom he has been training for 5 years and who will be cooking at Qasti Green. Together, they have come up with a vegetarian cuisine that is both delightful and convivial, just like home, combining tradition and creativity.
On either menu, or the Sunday brunch buffet, Qasti Green features vegetarian mezzés (fresh labneh with Kalamata olives and fried kale; fatayers with spinach and pine nuts) and other Lebanese staples, with a vegan twist.
Shawarma becomes celery, mushroom and halloumi shawarma; kebbeh becomes pumpkin, spinach or beet; daoud bacha meatballs become lentil, almond, bulgur and vegetable balls flavored with kefta spices.
Mouhalabieh with grapefruit, achta ice cream with orange blossom and crushed pistachios from Bachir's, or traditional kneffeh complete the menu. Going green?
