For years, Baptiste Trudel has been teasing out his love of flat bread - at Datsha, at Mordu, then with Flat B, a delivery service dedicated to this specialty. Last year, this young chef discovered by the general public on Top Chef finally opened his restaurant dedicated to flat bread, soberly named Flat Bread, a stone's throw from Place de la République.
Although Baptiste Trudel has now retired from the business, Flat Bread remains a place of pleasure for street-food lovers. Better still, the address now changes face according to the time of day, with a street-food atmosphere at lunchtime and a bistronomic dining cellar in the evening, all washed down with natural, living wines.
For the record, flat bread is an easy-to-prepare flatbread made from flour, water and salt, found in many countries around the world in a variety of forms and recipes. Among the most famous flat breads are the Mediterranean pita, Indian naan, South American tortilla and Italian focaccia.
But the flat bread we particularly like is the kind served pizza-style, with a variety of toppings on top and sauce to bind it all together. And it's precisely this type of recipe that Flat Bread honors, in an airy, fluffy version.
To take away, on the terrace or at the counter of this little stall on Rue René Boulanger, the chef unveils a lunch menu made up of a variety of flat breads, some permanent, others temporary; offered at prices that are rather reasonable for the quality, generosity and pleasure provided.
For example, we love the Benedicte flat bread (11€) in the style of the eggs of the same name, with poached egg with runny yolk, bacon, trout roe and hollandaise sauce; or the Tarama flat bread (10€) with tarama and pomelos. And there's always that little cloud as a cozy bed.
The bistronomic novelties are just as delectable, with the added bonus that they are served with good manners and accompanied by a glass of wine well chosen by the chef. Next up, then, we have a mouth-watering croquetas de cochon (8€) to dip in zaatar curd cheese (for a clear conscience), and a generous slice of pâté en croûte maison (12€) with a hint of curry.
The classic artichokes barigoule are given a twist with a quick BBQ (11.50€) that gives them a delicious smoky taste; and to finish, a nice piece of octopus (13€), snacked but still melting, with its tangy Sichuan pepper sauce, where you'll gladly put your piece of bread back in.
From street food to bistro, Flat Bread has a new look, and it's a no-brainer!
